The Roca brothers, who run Spain\u2019s esteemed El Celler de Can Roca restaurant, have teamed up with The Macallan once again, this time to release a limited edition single malt whisky finished in casks from four Spanish bodegas.

The limited edition release aims to \u201cunlock the workings\u201d of the whisky-making process and give consumers the chance to \u201cexplore how the whisky was created\u201d through cask crafting, oak provenance, seasoning and size.<\/p>\n

Created by Bob Dalgarno, The Macallan\u2019s master whisky maker, and the Roca brothers, co-founders of restaurant El Celler de Can Roca; the whisky features seven whiskies hailing from Vasyma, Diego Martin, Jose Miguel Martin and Tevasa bodegas, handpicked by the collaborators to represent different aspects of their personality.<\/p>\n

The European oak Tevasa casks selected by Dalgarno define the whisky, with notes of rich, dried fruit \u2013 to represent his \u201cever-curious, patient and empathetic character\u201d.<\/p>\n

Notes of green wood and toffee from the American and European Diego Martin casks selected by Joan Roca represent his \u201cgenerous, reflective and passionate nature\u201d, while notes of allspice and ginger from European oak Jose Miguel Martin casks denote Josep Roca\u2019s \u201ccomplexity, warmth and maturity\u201d.<\/p>\n

Notes of citrus and light vanilla from the American oak Vasyma butts and puncheons selected by Jordi Roca reflect his \u201clively and vivacious\u201d qualities.<\/p>\n

Dalgarno said: \u201cBy collaborating with the Roca brothers we have combined our knowledge of whisky making with their creative culinary expertise. The result \u2013 a single malt that challenges expectations.<\/p>\n

\u201cThe driving force behind the Edition Series is the freedom we have to explore different and distinctive casks, some that might not typically be used in other Macallan whiskies.<\/p>\n

\u201cWith wood at the very heart of this series, we very much enjoyed the opportunity to delve into each individual cask, discovering the style and the special influence it can impart on the resulting whisky.<\/p>\n

\u201cThe harmony and balance of Edition No. 2 reflects not only the hand selected casks but the relationship that we have been developing with Joan, Josep and Jordi over the last few years \u2013 it is a powerful collaboration and one that I have loved being a part of.\u201d<\/p>\n

Josep Roca, sommelier, said: \u201cOur shared values and passions with The Macallan are taken a step further with our Edition No. 2 collaboration. Working with Bob to identity casks which reflect each of us personally was truly a unique and magical experience.<\/p>\n

\u201cWe are really proud of this partnership and the exceptional whisky created as a result.\u201d<\/p>\n

Bottled at 48.2% abv, Edition No. 2 is said to have a \u201cwarm, spicy and complex character\u201d with key notes of apple, oranges, toffee, dried fruit and vanilla.<\/p>\n

The Macallan Edition No. 2 is available in specialist whisky retailers for an RRP of \u00a365.<\/p>\n
