The range was first revealed in 2014, following an \u00a318 million investment in doubling the capacity of the distillery.<\/p>\n<p>Mortlach is produced using a distillation process called \u2018The Way\u2019 which effectively distils the liquid 2.81 times. The process has remained unchanged since it was invented by the distiller\u2019s son Dr Alexander Cowie in 1896.<\/p>\n<p>The method gives the single malt Scotch a \u201cdistinct and thick\u201d character, dubbing it the \u2018The Beast of Dufftown\u2019.<\/p>\n<p>Bottled at 43.4%, the 12-year-old Wee Witchie has \u201ctoasty oak tones\u201d on the nose, a \u201csweet, almost smoky\u201d palate, with a \u201cdry, slightly sooty\u201d finish. It is priced at \u00a350.<\/p>\n<p>Distiller\u2019s Dram is a 16-year-old single malt, priced at \u00a380. It has orchard fruit and earthy notes on the nose, a \u201ctoffee-like\u201d palate and a \u201clong, complex, meaty\u201d finish.<\/p>\n<p>Meanwhile, Cowie\u2019s Blue Seal 20-year-old is described as having a \u201cwaxy, earthy, meaty element\u201d and \u201coverripe fruits and a touch of spiciness\u201d on the palate. It has an RRP of \u00a3200 and is bottled at 43.4% abv.<\/p>\n<p>Dr Craig Wilson, master blender, said: \u201cThese whiskies really stand out in Speyside. For me it\u2019s the way the unique 2.81 process gives you such an intensely complex liquid and character from the minute it comes off the still; it\u2019s like having three distilleries at the one still house.<\/p>\n<p>\u201cOur job is to hone the character in the right way to give you three well balanced whiskies of unparalleled richness and complexity.\u201d<\/p>\n<p>Mark Brunton, distillery manager, said: \u201cIt\u2019s an honour to work in a distillery with such a distinct heritage and I love the challenge that comes with it. We worked with our colleagues in maturation to create a diverse range with each at its heart still reflecting the bold distillery flavour.<\/p>\n<p>\u201cThe 16-year-old is a classic Mortlach expression, while the 12-year-old offers a strong distillery character through its use of refill casks.
