Heinemann Duty Free at Sydney Airport has introduced\u00a0Four Pillars Australian Christmas Gin to travellers – perfect for those hot Christmas Holiday parties on the beach.<\/p>\n

Four Pillars is a small Australian distillery originally established by Cameron, Matt and Stuart in 2013. Th Distillery sold its first batch of Rare Dry Gin through a crowdfunding campaign and has gone from strength to strength ever since. They now produce numerous editions of their Gins each with a distinct Australian flavour – including the Christmas Gin which is relaunched each December, and is now available in duty-free shops at Sydney International.<\/p>\n

AUSTRALIAN CHRISTMAS GIN<\/strong><\/p>\n

To make this gin the team first distills some Christmas puddings (made to Cam’s mother Wilma’s 1968 recipe) with juniper, cinnamon, star anise, coriander and angelica over the top.<\/span><\/p>\n

Cam also ages gin in a couple of 125-year-old ex-William Grant scotch whisky barrels that had previously stored Rutherglen Muscat for 80 years. He then blends this with the Christmas Pudding gin, and to finish he adds a slight tweak of Rutherglen Classic Muscat to round out the palate. Cam also adds a touch of our own muscat that has been sitting in barrels which previously aged Pedro Ximenez. So we get even more depth, richness and complexity.<\/p>\n

The 2018 #Australian Christmas Gin label was created in collaboration with the very talented Melbourne artist Stephen Baker.<\/p>\n

This year\u2019s artwork, ‘Basking in the Sun’, is Stephen\u2019s snapshot of a quintessential Australian summer Christmas scene. Lying next to the pool, listening to Triple JJJ or the cricket on the radio, after a big lunch.<\/span><\/p>\n

More than ever, it smells like gin and tastes like Christmas. Sip it neat (it\u2019s dangerously drinkable, so one 700mL bottle may not go far on Christmas Day) or try it in some great cocktails like this Christmas Cobbler.<\/p>\n

INGREDIENTS<\/strong><\/p>\n

50ml Australian Christmas Gin
\n25ml Lemon juice
\n15ml Muscat
\n10ml Sugar syrup<\/p>\n

METHOD<\/strong><\/p>\n

Build this drink in a julep tin or tumbler with crushed ice, and stir with a swizzle stick or bar spoon to combine well.
\nGarnish with a mix of gorgeous fresh mint sprigs, an orange crescent, cherry and some seasonal berries.<\/p>\n
