LARK Distilling Co. has launched a new activation at Sydney Airport, running throughout May and June, inviting travellers to discover its newly released 700ml Single Malt Collection.

The collection features three travel-exclusive Tasmanian single malt expressions alongside Devil’s Storm No.183 and Ruby Abyss No.285, which recently won World’s Best Design and Best Range Design at the World Whiskies Awards 2026 in London.

Since the launch of the activation, LARK has become the #1 single malt and #3 brand in the alcohol category, rising from #17 during the same period last year. The travel-exclusive collection comprises Cinder Forest No.168, Wild Haven No.172 and Ember Eclipse No.294, with each 700ml expression available exclusively through travel retail stores.

Adding to the experience, LARK Master Distiller Chris Thomson was in store at Heinemann Tax&Duty Free, Sydney Airport, personally engaging with shoppers, sharing the stories behind the whiskies, and signing bottles for travellers looking to take home something truly memorable.

Unmistakably Tasmanian in every detail

The new expressions are built around rich fortified character and layers of silky complexity, balancing sweetness with a New World interpretation of umami. Each whisky showcases Tasmanian single malt matured and finished in some of the world’s finest casks, including Rum and Cognac.

Matured in rare fortified wine casks from Seppeltsfield Wines in the Barossa Valley — some carrying more than 100 years of liquid history — the whiskies were developed using a multi-cask method and bespoke seasoning programme with Tawny, PX, Apera and Muscadelle. Fermentation tanks are exposed to the wild micro-organisms of the Tasmanian air, local apple wood is used to smoke the water, and peat is sourced from LARK’s own peat mine in Tasmania’s Central Highlands.

Each expression’s name is a sensorial reference to Tasmania, while the numbering system serves as a recipe language identifying the key components of each whisky.

Cinder Forest No.168

Shaped by first-fill Port and Sherry casks with a rich American Oak finish, Cinder Forest No.168 offers poached nectarines, toasted almonds and acacia honey on the nose. The palate brings sumptuous berries and vanilla custard, finishing with espresso-laced nougat in velvety clotted cream.

Wild Haven No.172

Finished in exceptional Rum casks after maturing in vintage first-fill Port and Sherry casks from Seppeltsfield, Wild Haven No.172 is bold and intrepid. It opens with demerara sugar and strawberry compote, layering caramelised banana and cocoa nibs on the palate before a finish of spiced fruit cake and candied pecan.

Ember Eclipse No.294

Finished in exquisite Cognac casks following 100% first-fill vintage Port and Sherry ageing, Ember Eclipse No.294 weaves together pear tart, praline chocolate and quince paste, culminating in a finish of Madeira pudding, maple butter and tea.

LARK’s Sydney Airport activation at Heinemann runs throughout May and June. Travellers are encouraged to visit the store to try the new collection and take home a Tasmanian single malt whisky from LARK, Australia’s No.1 luxury single malt.
